INGREDIENTS: (for 4 people)
8 lamb chops 12 -16 small whole potatoes or, a couple of large potatoes cut into wedges 6 cloves of garlic, whole or you can chop them roughly Rosemary and oregano Salt and pepper to taste A little white wine and water - about 50 % a cup of each simply to keep your base moist 4 - 6 chopped fresh tomatoes or about 1 cup bottled tomato puree (try not to add a lot of, just enough to incorporate just a little colour and flavour) A handful of grated pecorino cheese A tiny couple of dry breadcrumbs
HERE S How you can ASSEMBLE:
Roughly layer the lamb chops using the potatoes. Poke the garlic cloves involving the lamb and potatoes. Sprinkle with fresh or dried rosemary and oregano, salt and pepper. Pour wine and water down one for reds so you don t wash off of the seasoning. Scatter chopped tomatoes or tomato puree over lamb and potatoes.
